Ingredients:

 

  • 400g boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 garlic cloves, minced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions:

 

  • In a medium bowl, whisk together the soy sauce, honey, cornstarch, and 1/4 cup of water until smooth. Set aside.
  • Heat the vegetable oil in a large skillet over high heat.
  • Add the chicken to the skillet and season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
  • Remove the chicken from the skillet and set aside on a plate.
  • Add the bell peppers, onion, and garlic to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes.
  • Return the chicken to the skillet and pour the honey-soy sauce mixture over the top.
  • Cook, stirring occasionally, until the sauce has thickened and the chicken and vegetables are coated, about 2-3 minutes.
  • Serve the stir-fry hot with cooked rice.
