1. Grilled Stonefruit Salad with Honey-Balsamic Dressing

A vibrant and refreshing salad that highlights the natural sweetness of stonefruit!

Ingredients:

  • 2 peaches, halved and pitted
  • 2 nectarines, halved and pitted
  • 1 cup mixed salad greens (rocket, spinach, or arugula work well)
  • ¼ cup crumbled feta cheese
  • 2 tbsp toasted almonds or walnuts
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat a grill or grill pan. Brush the peach and nectarine halves with a little olive oil and grill them for 2–3 minutes on each side, until caramelized. Let cool, then slice.
  2. In a small bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper.
  3. Arrange the greens on a plate, top with grilled stonefruit slices, crumbled feta, and toasted nuts.
  4. Drizzle with the honey-balsamic dressing and toss gently. Serve immediately.

2. Stonefruit Chicken Stir-Fry

A quick and savory dish with a hint of sweetness from fresh stonefruit.

Ingredients:

  • 2 chicken breasts, sliced into thin strips
  • 2 plums, sliced
  • 2 apricots, sliced
  • 1 red capsicum, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 2 tbsp Light olive oil

Instructions:

  1. Heat 1 tbsp of oil in a wok or large frying pan over medium-high heat. Add chicken strips and cook until golden, about 5–6 minutes. Remove and set aside.
  2. In the same pan, heat the remaining oil and sauté garlic, ginger, capsicum, and onion for 2 minutes.
  3. Add the stonefruit slices and stir-fry for another 2–3 minutes.
  4. Return the chicken to the pan and pour in soy sauce and honey. Stir well to coat everything in the sauce.
  5. Serve over steamed rice or noodles for a flavorful, quick meal.

3. Stonefruit Crumble

A comforting dessert bursting with warm, juicy stonefruit and a crunchy topping.

Ingredients:

  • 4 peaches or nectarines, sliced
  • 3 plums, sliced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 cup rolled oats
  • ½ cup plain flour
  • ½ cup brown sugar
  • ½ cup butter, melted

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Toss the stonefruit slices with sugar and cinnamon, then layer them in a baking dish.
  3. In a bowl, combine oats, flour, and brown sugar. Add melted butter and mix until crumbly.
  4. Spread the crumble mixture evenly over the fruit.
