Ingredients:
- 400g boneless skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 garlic cloves, minced
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Cooked rice, for serving
Instructions:
- In a medium bowl, whisk together the soy sauce, honey, cornstarch, and 1/4 cup of water until smooth. Set aside.
- Heat the vegetable oil in a large skillet over high heat.
- Add the chicken to the skillet and season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
- Remove the chicken from the skillet and set aside on a plate.
- Add the bell peppers, onion, and garlic to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes.
- Return the chicken to the skillet and pour the honey-soy sauce mixture over the top.
- Cook, stirring occasionally, until the sauce has thickened and the chicken and vegetables are coated, about 2-3 minutes.
- Serve the stir-fry hot with cooked rice.
